A lively trio of cocktails! You know how most things work better in threes… a bear, a horse, and a weasel walk into the bar and… well, you know the rest, I’m sure.

The Bear
1 & ½ oz Honey Rhubarb Gin
½ oz Green Chartreuse
3/4 oz Lime Juice
½ oz Honey Syrup*

Add all ingredients to a cocktail shaker and shake with ice. Strain into a chilled cocktail glass, rinsed with a peaty scotch (we used Laphroaig Quarter Cask). The Bear says, “I’ll have a whisky on the … … … rocks, please.” The bartender asks, “what’s with the big pause?” And the bear says, “oh, I was born with these.”

*Honey Syrup: dissolve 2 parts honey into 1 part water.

The Horse
1 oz Honey Rhubarb Gin
3/4 oz Cointreau
½ oz Lemon Juice
1/4 oz Campari

Add all ingredients to a cocktail shaker and shake with ice. Strain into a chilled cocktail glass. The Bartender asks, “hey, why the long face?” To which the horse responds with a presentation about equestrian evolution and, finally, the bartender understands.

The Weasel
1 & ½ oz Honey Rhubarb Gin
3/4 oz Licor 43
3/4 oz Lemon Juice
1 Fresh Strawberry

Aggressively muddle a strawberry into a cocktail shaker before adding all the rest of the ingredients. Shake with ice. The bartender says, “this is incredible! I’ve served all kinds in this establishment, but never in my life have I seen a weasel in here. A formal toast to first times, I say! Your first drink is on the house. Whatever you’d like. What can I get for you?” “Pop,” goes the weasel.
