Coffee Cupcakes with Hansen’s Cream Liqueur Icing | Recipe by @boozybaker_yeg

Coffee Cupcakes

  • 3 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • ¼ teaspoon cinnamon
  • Pinch of nutmeg
  • 2 cups sugar
  • ½ cup vegetable oil
  • ¾ cup buttermilk
  • 1 cup string brewed coffee, room temperature
  • 2 eggs
  • 2 teaspoons vanilla

Hansen’s Cream Liqueur Icing

You can use any of the Hansen Distillery Cream Liqueurs for this recipe.

Morning Glory – a chocolate hazelnut cream liqueur

Purple Cow – a Saskatoon Berry cream liqueur

Salted Caramel – a dulce de leche / salted caramel cream liqueur

Gingerbread Cookie – a festive cream liqueur full of real molasses, ginger and holiday spices

  • 1 cup butter, room temperature 
  • 5 cups icing sugar 
  • ¼ cup Hansen Distillery Cream Liqueur

Instructions

Coffee Cupcakes

  1. Preheat your oven to 350 degrees F.
  2. Line your cupcake pan with liners.
  3. Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and sugar in a medium bowl.
  4. Whisk vigorously the oil, milk, coffee, eggs, and vanilla together in a large bowl.
  5. Slowly add the flour mixture to the coffee mixture and mix to combine. Do not over mix.
  6. Evenly distribute the batter among the liners.
  7. Bake the cupcakes for about 25 – 30 minutes, or until a toothpick comes out clean.
  8. Allow the cupcakes to completely cool before frosting.

Hansen’s Cream Liqueur Icing

  1. Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy.
  2. Gradually beat in confectioners’ sugar until fully incorporated. 
  3. Pour in your choice of Hansen Distillery cream liqueur, and beat for an additional minute.
  4. Add food colouring, if using, and beat for until smooth or until desired colour is reached.

Makes enough for 24 cupcakes or 8” stacked cake
